Ingredients

  • 1 whole chicken, cut into pieces
  • 2 cups coconut milk
  • 5 shallots
  • 4 cloves garlic
  • 5 red chili peppers
  • 3 tomatoes
  • 1 inch ginger
  • 1 tablespoon tamarind paste
  • 2 bay leaves
  • 1 teaspoon sugar
  • Salt to taste
  • Water

Instructions

  1. Grind shallots, garlic, red chili peppers, and ginger into a paste.
  2. Heat a pot over medium heat and add the spice paste. Cook for 3-4 minutes until fragrant.
  3. Add the chicken pieces and cook until they change color.
  4. Pour in the coconut milk and add tamarind paste, bay leaves, sugar, and salt. Stir well.
  5. Add water as needed to cover the chicken. Simmer for 30-40 minutes until the chicken is tender and the sauce thickens.
  6. Serve hot with steamed rice.
