Ayam Rica Rica (makassar-style Coconut Milk Chicken)
Ayam Rica Rica is a traditional spicy chicken dish from the Makassar cuisine of Indonesia. It is known for its rich and flavorful coconut milk-based sauce with a kick of heat from various spices.
Ingredients
- 1 whole chicken, cut into pieces
- 2 cups coconut milk
- 5 shallots
- 4 cloves garlic
- 5 red chili peppers
- 3 tomatoes
- 1 inch ginger
- 1 tablespoon tamarind paste
- 2 bay leaves
- 1 teaspoon sugar
- Salt to taste
- Water
Instructions
- Grind shallots, garlic, red chili peppers, and ginger into a paste.
- Heat a pot over medium heat and add the spice paste. Cook for 3-4 minutes until fragrant.
- Add the chicken pieces and cook until they change color.
- Pour in the coconut milk and add tamarind paste, bay leaves, sugar, and salt. Stir well.
- Add water as needed to cover the chicken. Simmer for 30-40 minutes until the chicken is tender and the sauce thickens.
- Serve hot with steamed rice.
