Ingredients
- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch strips
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1/2 teaspoon turmeric
- 1/2 teaspoon ground ginger
- 1/4 teaspoon cayenne pepper
- 1/4 cup coconut milk
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a bowl, combine soy sauce, brown sugar, minced garlic, ground coriander, ground cumin, turmeric, ground ginger, cayenne pepper, and coconut milk. Mix well to make the marinade.
- Add the chicken strips to the marinade and toss to coat. Cover and refrigerate for at least 2 hours, or overnight for best results.
- Preheat the grill or stovetop grill pan over medium-high heat. Thread the marinated chicken strips onto the soaked wooden skewers.
- Grill the chicken skewers for 3-4 minutes on each side, or until cooked through and slightly charred.
- Serve the Ayam Satay hot with peanut sauce and cucumber salad on the side.
