Ayam Satay (chicken Satay Skewers)

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch strips
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup coconut milk
  • Wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, combine soy sauce, brown sugar, minced garlic, ground coriander, ground cumin, turmeric, ground ginger, cayenne pepper, and coconut milk. Mix well to make the marinade.
  2. Add the chicken strips to the marinade and toss to coat. Cover and refrigerate for at least 2 hours, or overnight for best results.
  3. Preheat the grill or stovetop grill pan over medium-high heat. Thread the marinated chicken strips onto the soaked wooden skewers.
  4. Grill the chicken skewers for 3-4 minutes on each side, or until cooked through and slightly charred.
  5. Serve the Ayam Satay hot with peanut sauce and cucumber salad on the side.
