Ayam Tomato Sarawak (sarawakian Tomato Chicken)

Ingredients

  • 1 whole chicken, cut into pieces
  • 2 onions, finely chopped
  • 3 tomatoes, blended
  • 4 cloves garlic, minced
  • 2 inches ginger, grated
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 cinnamon stick
  • 2 tablespoons cooking oil
  • Salt to taste

Instructions

  1. Heat the cooking oil in a large pot over medium heat.
  2. Add the chopped onions, minced garlic, and grated ginger. Sauté until fragrant.
  3. Add the chicken pieces and cook until they are browned on all sides.
  4. Stir in the blended tomatoes, turmeric powder, chili powder, coriander powder, cumin powder, cinnamon stick, and salt. Mix well.
  5. Cover the pot and let the chicken simmer in the tomato sauce for 30 minutes, or until the chicken is fully cooked and tender.
  6. Once done, remove the cinnamon stick and serve the Ayam Tomato Sarawak hot with steamed rice.
