Ayam Tomato Sarawak (sarawakian Tomato Chicken)
Ayam Tomato Sarawak, or Sarawakian Tomato Chicken, is a popular dish in Sarawakian cuisine. It features tender chicken pieces cooked in a flavorful tomato-based sauce, infused with aromatic spices and herbs.
Ingredients
- 1 whole chicken, cut into pieces
- 2 onions, finely chopped
- 3 tomatoes, blended
- 4 cloves garlic, minced
- 2 inches ginger, grated
- 1 teaspoon turmeric powder
- 1 teaspoon chili powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 cinnamon stick
- 2 tablespoons cooking oil
- Salt to taste
Instructions
- Heat the cooking oil in a large pot over medium heat.
- Add the chopped onions, minced garlic, and grated ginger. Sauté until fragrant.
- Add the chicken pieces and cook until they are browned on all sides.
- Stir in the blended tomatoes, turmeric powder, chili powder, coriander powder, cumin powder, cinnamon stick, and salt. Mix well.
- Cover the pot and let the chicken simmer in the tomato sauce for 30 minutes, or until the chicken is fully cooked and tender.
- Once done, remove the cinnamon stick and serve the Ayam Tomato Sarawak hot with steamed rice.
