Ba Bao Zhou (eight Treasures Congee)
Ba Bao Zhou, also known as Eight Treasures Congee, is a traditional Chinese dish from the Huaiyang Cuisine. This nutritious and delicious congee is made with a variety of grains, beans, and dried fruits, making it a perfect breakfast or comforting meal.
Ingredients
- 1/2 cup glutinous rice
- 1/4 cup sweet rice
- 1/4 cup barley
- 1/4 cup adzuki beans
- 1/4 cup mung beans
- 1/4 cup dried lotus seeds
- 1/4 cup dried red dates
- 1/4 cup dried goji berries
- 8 cups water
- Rock sugar or honey to taste
Instructions
- Rinse the glutinous rice, sweet rice, barley, adzuki beans, and mung beans. Soak them in water for at least 2 hours or overnight.
- Rinse the dried lotus seeds, dried red dates, and dried goji berries.
- In a large pot, combine the soaked grains, beans, lotus seeds, red dates, goji berries, and water.
- Bring the mixture to a boil, then reduce the heat to low and simmer for about 1 hour, stirring occasionally.
- Add rock sugar or honey to taste, and continue to simmer for another 15 minutes until the congee thickens.
- Serve hot and enjoy!
