Ingredients
- 2 large eggplants
- 3 cloves garlic, minced
- 3 tablespoons tahini

- Salt to taste

Instructions
- Preheat the stovetop grill to medium-high heat.
- Pierce the eggplants with a fork in several places and place them on the grill. Cook, turning occasionally, until the skin is charred and the flesh is soft, about 20 minutes.
- Remove the eggplants from the grill and let them cool. Once cooled, peel off the skin and chop the flesh.
- In a bowl, mix the chopped eggplant, minced garlic, tahini, lemon juice, and salt. Stir until well combined.
- Transfer the mixture to a serving dish and drizzle with extra virgin olive oil. Sprinkle with chopped parsley and paprika.
