Ingredients

  • 2 large eggplants
  • 3 cloves garlic, minced
  • 3 tablespoons tahini
  • 2 tablespoons lemon juice
  • 1/4 cup extra virgin olive oil

  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon paprika

Instructions

  1. Preheat the stovetop grill to medium-high heat.
  2. Pierce the eggplants with a fork in several places and place them on the grill. Cook, turning occasionally, until the skin is charred and the flesh is soft, about 20 minutes.
  3. Remove the eggplants from the grill and let them cool. Once cooled, peel off the skin and chop the flesh.
  4. In a bowl, mix the chopped eggplant, minced garlic, tahini, lemon juice, and salt. Stir until well combined.
  5. Transfer the mixture to a serving dish and drizzle with extra virgin olive oil. Sprinkle with chopped parsley and paprika.
