Ingredients
- 500g minced pork
- 4 shallots, finely chopped
- 3 cloves garlic, minced
- 2 tomatoes, diced
- 2 red chilies, sliced
- 2 lemongrass stalks, bruised
- 3 kaffir lime leaves
- 1 liter chicken broth
- 2 tablespoons tamarind paste
- 1 tablespoon palm sugar
- Salt to taste
- Chopped green onions for garnish
Instructions
- In a pot, sauté the shallots and garlic until fragrant.
- Add the minced pork and cook until browned.
- Add the tomatoes, red chilies, lemongrass, and kaffir lime leaves. Cook for 2-3 minutes.
- Pour in the chicken broth and bring to a boil.
- Stir in the tamarind paste and palm sugar. Season with salt to taste.
- Simmer for 30-40 minutes until the flavors are well combined.
- Remove the lemongrass stalks and kaffir lime leaves before serving.
- Garnish with chopped green onions.
