Babi Panggang Karo (spicy Grilled Beef Ribs)
Babi Panggang Karo is a traditional Batak dish from the Karo region in North Sumatra, Indonesia. This spicy grilled beef ribs dish is bursting with flavor and is a favorite at special occasions and family gatherings.
Ingredients
- 1 kg beef ribs
- 5 shallots, finely chopped
- 4 cloves garlic, minced
- 3 red chilies, finely chopped
- 2 tomatoes, diced
- 1 tsp tamarind paste
- 1 tsp salt
- 1 tsp sugar
- 2 tbsp vegetable oil
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, mix together the shallots, garlic, red chilies, tomatoes, tamarind paste, salt, sugar, and vegetable oil to make a marinade.
- Rub the marinade all over the beef ribs and let them marinate for 15 minutes.
- Grill the beef ribs for about 1 hour, turning occasionally, until they are cooked through and charred on the outside.
- Remove from the grill and let the beef ribs rest for a few minutes before serving.
