Ingredients

  • 1 kg beef ribs
  • 5 shallots, finely chopped
  • 4 cloves garlic, minced
  • 3 red chilies, finely chopped
  • 2 tomatoes, diced
  • 1 tsp tamarind paste
  • 1 tsp salt
  • 1 tsp sugar
  • 2 tbsp vegetable oil

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, mix together the shallots, garlic, red chilies, tomatoes, tamarind paste, salt, sugar, and vegetable oil to make a marinade.
  3. Rub the marinade all over the beef ribs and let them marinate for 15 minutes.
  4. Grill the beef ribs for about 1 hour, turning occasionally, until they are cooked through and charred on the outside.
  5. Remove from the grill and let the beef ribs rest for a few minutes before serving.
