Ingredients

  • 1 lb salted cod, soaked and desalted
  • 4 large potatoes, peeled and sliced
  • 1/4 cup olive oil
  • 2 teaspoons sweet paprika
  • 2 cloves garlic, minced
  • Salt, to taste
  • Chopped parsley, for garnish

Instructions

  1. Boil the desalted cod in a large pot of water for 5 minutes. Drain and flake the cod into large pieces.
  2. In a separate pot, boil the sliced potatoes until they are just tender. Drain and set aside.
  3. Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook until fragrant.
  4. Add the flaked cod and sliced potatoes to the skillet. Sprinkle with sweet paprika and gently toss to combine.
  5. Cook for 10-15 minutes, stirring occasionally, until the potatoes are golden and the cod is heated through.
  6. Season with salt to taste and garnish with chopped parsley before serving.
