Bacalao a la Gallega, or Galician Style Cod, is a traditional dish from the Galicia region of Spain. This simple yet flavorful recipe showcases the delicious taste of salted cod, combined with potatoes, paprika, and olive oil.
Ingredients
- 1 lb salted cod, soaked and desalted
- 4 large potatoes, peeled and sliced
- 1/4 cup olive oil
- 2 teaspoons sweet paprika
- 2 cloves garlic, minced
- Salt, to taste
- Chopped parsley, for garnish
Instructions
- Boil the desalted cod in a large pot of water for 5 minutes. Drain and flake the cod into large pieces.
- In a separate pot, boil the sliced potatoes until they are just tender. Drain and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the minced garlic and cook until fragrant.
- Add the flaked cod and sliced potatoes to the skillet. Sprinkle with sweet paprika and gently toss to combine.
- Cook for 10-15 minutes, stirring occasionally, until the potatoes are golden and the cod is heated through.
- Season with salt to taste and garnish with chopped parsley before serving.
