Bacalhau à Gomes de Sá (Gomes de Sá Codfish)

Ingredients

  • 1 lb salted codfish
  • 1 lb potatoes
  • 2 onions
  • 4 eggs
  • 1/2 cup olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Soak the salted codfish in water for 24 hours, changing the water several times to remove excess salt.
  2. Boil the codfish until it flakes easily, then remove the skin and bones and break it into small pieces.
  3. Boil the potatoes until tender, then peel and slice them.
  4. Slice the onions and sauté them in olive oil until golden.
  5. Hard-boil the eggs, then peel and slice them.
  6. In a baking dish, layer the codfish, potatoes, onions, and eggs, seasoning each layer with salt and pepper and drizzling with olive oil.
  7. Bake in a preheated oven at 350°F for 20-25 minutes, until golden and crispy on top.
  8. Garnish with fresh parsley before serving.
