Ingredients

  • 2 large eggplants, sliced
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup olive oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 cups tomato puree
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a bowl, mix the flour, salt, and black pepper. Dredge the eggplant slices in the flour mixture.
  2. Heat the olive oil in a large skillet over medium heat. Fry the eggplant slices until golden brown. Remove from the skillet and set aside on a paper towel to drain excess oil.
  3. In the same skillet, sauté the onion and garlic until softened.
  4. Add the tomato puree, paprika, cumin, and salt. Simmer for 15-20 minutes until the sauce thickens.
  5. Arrange the fried eggplant slices in a serving dish and pour the tomato sauce over them. Garnish with chopped fresh parsley.
