Badenjan (fried Eggplant With Tomato Sauce)
Badenjan is a traditional Kurdish dish made with fried eggplant and a flavorful tomato sauce. It's a delicious and comforting dish that is perfect for a cozy family dinner or a gathering with friends.
Ingredients
- 2 large eggplants, sliced
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup olive oil
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 cups tomato puree
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt to taste
- Chopped fresh parsley for garnish
Instructions
- In a bowl, mix the flour, salt, and black pepper. Dredge the eggplant slices in the flour mixture.
- Heat the olive oil in a large skillet over medium heat. Fry the eggplant slices until golden brown. Remove from the skillet and set aside on a paper towel to drain excess oil.
- In the same skillet, sauté the onion and garlic until softened.
- Add the tomato puree, paprika, cumin, and salt. Simmer for 15-20 minutes until the sauce thickens.
- Arrange the fried eggplant slices in a serving dish and pour the tomato sauce over them. Garnish with chopped fresh parsley.
