Ingredients

  • 2 large eggplants
  • 1 cup walnuts, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon ground coriander
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the eggplants into 1/4-inch thick slices and sprinkle with salt. Let them sit for 10 minutes to release excess moisture.
  3. Rinse the eggplant slices and pat them dry with a paper towel.
  4. In a bowl, mix together the walnuts, garlic, parsley, olive oil, red wine vinegar, coriander, salt, and pepper.
  5. Spoon a small amount of the walnut mixture onto each eggplant slice and spread it evenly.
  6. Roll up the eggplant slices and secure them with toothpicks.
  7. Heat a skillet over medium heat and lightly oil the surface.
  8. Cook the rolled eggplant slices for 3-4 minutes on each side, or until golden brown.
  9. Remove from the skillet and let them cool slightly before serving.
