Badrijani Bliss is a traditional Georgian dish made with eggplant, walnuts, and spices. This flavorful appetizer is perfect for entertaining or as a side dish for a special meal.
Ingredients
- 2 large eggplants
- 1 cup walnuts, finely chopped
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon ground coriander
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the eggplants into 1/4-inch thick slices and sprinkle with salt. Let them sit for 10 minutes to release excess moisture.
- Rinse the eggplant slices and pat them dry with a paper towel.
- In a bowl, mix together the walnuts, garlic, parsley, olive oil, red wine vinegar, coriander, salt, and pepper.
- Spoon a small amount of the walnut mixture onto each eggplant slice and spread it evenly.
- Roll up the eggplant slices and secure them with toothpicks.
- Heat a skillet over medium heat and lightly oil the surface.
- Cook the rolled eggplant slices for 3-4 minutes on each side, or until golden brown.
- Remove from the skillet and let them cool slightly before serving.
