Ingredients

  • 2 cups basmati rice
  • 1 cup frozen or fresh lima beans
  • 1 large onion, finely chopped
  • 1/2 cup chopped fresh dill
  • 4 tablespoons butter or olive oil
  • 1 teaspoon ground turmeric
  • Salt and pepper to taste

Instructions

  1. Rinse the basmati rice in cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  2. In a large pot, bring 6 cups of water to a boil. Add the drained rice and cook for 6-8 minutes, or until the rice is parboiled. Drain and set aside.
  3. In a separate pot, sauté the chopped onion in butter or olive oil until golden brown. Add the lima beans, dill, and turmeric. Cook for 5 minutes, stirring occasionally.
  4. Gently fold in the parboiled rice, season with salt and pepper, and cover the pot with a clean kitchen towel and a lid. Cook over low heat for 30 minutes.
  5. Once the rice is tender and fluffy, remove from heat and let it rest for 5 minutes. Fluff the rice with a fork before serving.
