Baghali Polo (persian Dill And Lima Bean Rice)
Baghali Polo is a traditional Persian rice dish flavored with dill and tender lima beans. This aromatic and flavorful rice is a staple in West Asian cuisine, often served with lamb or chicken.
Ingredients
- 2 cups basmati rice
- 1 cup frozen or fresh lima beans
- 1 large onion, finely chopped
- 1/2 cup chopped fresh dill
- 4 tablespoons butter or olive oil
- 1 teaspoon ground turmeric
- Salt and pepper to taste
Instructions
- Rinse the basmati rice in cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
- In a large pot, bring 6 cups of water to a boil. Add the drained rice and cook for 6-8 minutes, or until the rice is parboiled. Drain and set aside.
- In a separate pot, sauté the chopped onion in butter or olive oil until golden brown. Add the lima beans, dill, and turmeric. Cook for 5 minutes, stirring occasionally.
- Gently fold in the parboiled rice, season with salt and pepper, and cover the pot with a clean kitchen towel and a lid. Cook over low heat for 30 minutes.
- Once the rice is tender and fluffy, remove from heat and let it rest for 5 minutes. Fluff the rice with a fork before serving.
