Baghali Polo (persian Rice With Dill And Lima Beans)
Baghali Polo is a classic Persian rice dish that is flavored with dill and tender lima beans. It's a delicious and aromatic dish that is perfect for special occasions or as a comforting meal at home.
Ingredients
- 2 cups basmati rice
- 1 cup frozen lima beans
- 1/2 cup chopped fresh dill
- 1 onion, finely chopped
- 4 tablespoons butter
- 1 teaspoon ground turmeric
- Salt and pepper to taste
Instructions
- Rinse the basmati rice in a bowl of water until the water runs clear. Drain and set aside.
- In a large pot, melt 2 tablespoons of butter over medium heat. Add the chopped onion and sauté until golden brown.
- Add the turmeric, lima beans, and half of the chopped dill to the pot. Sauté for a few minutes until fragrant.
- Add the rinsed rice to the pot and stir to combine with the other ingredients.
- Pour enough water into the pot to cover the rice by about 1 inch. Season with salt and pepper.
- Bring the pot to a boil, then reduce the heat to low, cover, and simmer for 45 minutes, or until the rice is tender and the water is absorbed.
- Once the rice is cooked, fluff it with a fork and gently fold in the remaining dill and 2 tablespoons of butter.
- Transfer the Baghali Polo to a serving platter and serve hot.
