Ingredients

  • 2 cups basmati rice
  • 1 cup frozen lima beans
  • 1/2 cup chopped fresh dill
  • 1 onion, finely chopped
  • 4 tablespoons butter
  • 1 teaspoon ground turmeric
  • Salt and pepper to taste

Instructions

  1. Rinse the basmati rice in a bowl of water until the water runs clear. Drain and set aside.
  2. In a large pot, melt 2 tablespoons of butter over medium heat. Add the chopped onion and sauté until golden brown.
  3. Add the turmeric, lima beans, and half of the chopped dill to the pot. Sauté for a few minutes until fragrant.
  4. Add the rinsed rice to the pot and stir to combine with the other ingredients.
  5. Pour enough water into the pot to cover the rice by about 1 inch. Season with salt and pepper.
  6. Bring the pot to a boil, then reduce the heat to low, cover, and simmer for 45 minutes, or until the rice is tender and the water is absorbed.
  7. Once the rice is cooked, fluff it with a fork and gently fold in the remaining dill and 2 tablespoons of butter.
  8. Transfer the Baghali Polo to a serving platter and serve hot.
