Baghali Polo (saffron And Rosewater Pancakes)

Ingredients

  • 1 cup basmati rice
  • 1 cup fava beans
  • 1/4 cup chopped dill
  • 1/2 teaspoon saffron threads
  • 1 tablespoon rosewater
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 cup water

Instructions

  1. Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.
  2. In a large bowl, combine the rice, fava beans, dill, saffron, rosewater, cinnamon, cardamom, salt, and black pepper. Mix well.
  3. Heat the vegetable oil in a non-stick skillet over medium heat. Spread the rice mixture evenly in the skillet.
  4. Pour the water over the rice mixture. Cover and cook for 25-30 minutes, or until the rice is cooked through and the bottom is golden brown.
  5. Using a large plate, carefully flip the pancake onto the plate. Slide it back into the skillet and cook for an additional 5 minutes to brown the other side.
  6. Remove from the skillet and let it cool for a few minutes before slicing into wedges.
