Baghali Polo (saffron And Rosewater Pancakes)
Baghali Polo is a traditional Iranian dish made with rice, fava beans, and dill. In this recipe, we'll put a unique twist on this classic dish by turning it into delicious saffron and rosewater pancakes.
Ingredients
- 1 cup basmati rice
- 1 cup fava beans
- 1/4 cup chopped dill
- 1/2 teaspoon saffron threads
- 1 tablespoon rosewater
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons vegetable oil
- 1 cup water
Instructions
- Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.
- In a large bowl, combine the rice, fava beans, dill, saffron, rosewater, cinnamon, cardamom, salt, and black pepper. Mix well.
- Heat the vegetable oil in a non-stick skillet over medium heat. Spread the rice mixture evenly in the skillet.
- Pour the water over the rice mixture. Cover and cook for 25-30 minutes, or until the rice is cooked through and the bottom is golden brown.
- Using a large plate, carefully flip the pancake onto the plate. Slide it back into the skillet and cook for an additional 5 minutes to brown the other side.
- Remove from the skillet and let it cool for a few minutes before slicing into wedges.
