Baghrir (moroccan Chickpea Pancakes)
Baghrir, also known as Moroccan Chickpea Pancakes, are a delicious and unique dish from Moroccan cuisine. These spongy, holey pancakes are a popular breakfast or snack in Morocco, often served with honey or syrup.
Ingredients
- 1 cup semolina
- 1/2 cup chickpea flour
- 1 teaspoon active dry yeast
- 1 1/2 cups warm water
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1 teaspoon baking powder
Instructions
- In a large bowl, mix together the semolina, chickpea flour, and yeast.
- Add the warm water and sugar to the bowl, then stir to combine. Cover the bowl and let it sit for 15 minutes to allow the yeast to activate.
- After 15 minutes, uncover the bowl and add the salt and baking powder. Stir the batter until well combined.
- Heat a non-stick pan over medium heat. Pour a ladleful of batter onto the pan and cook until the surface is covered with bubbles and the edges are set, about 2-3 minutes.
- Repeat with the remaining batter, cooking the pancakes in batches.
- Serve the baghrir warm with honey or syrup.
