Ingredients

  • 1 cup semolina
  • 1/2 cup chickpea flour
  • 1 teaspoon active dry yeast
  • 1 1/2 cups warm water
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder

Instructions

  1. In a large bowl, mix together the semolina, chickpea flour, and yeast.
  2. Add the warm water and sugar to the bowl, then stir to combine. Cover the bowl and let it sit for 15 minutes to allow the yeast to activate.
  3. After 15 minutes, uncover the bowl and add the salt and baking powder. Stir the batter until well combined.
  4. Heat a non-stick pan over medium heat. Pour a ladleful of batter onto the pan and cook until the surface is covered with bubbles and the edges are set, about 2-3 minutes.
  5. Repeat with the remaining batter, cooking the pancakes in batches.
  6. Serve the baghrir warm with honey or syrup.
