Bahamian Coconut Curry Beef

Ingredients

  • 1 1/2 lbs beef, cut into cubes
  • 2 tbsp curry powder
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, sliced
  • 1 cup coconut milk
  • 2 tbsp soy sauce
  • 1 tsp brown sugar
  • 1 tsp ginger, grated
  • 1 scotch bonnet pepper, chopped (optional for heat)
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, season the beef with curry powder, salt, and pepper. Let it marinate for 15 minutes.
  2. Heat vegetable oil in a large pot over medium heat. Add the marinated beef and cook until browned on all sides. Remove the beef from the pot and set aside.
  3. In the same pot, sauté the onion, garlic, and bell pepper until softened.
  4. Return the beef to the pot and add coconut milk, soy sauce, brown sugar, ginger, and scotch bonnet pepper (if using).
  5. Simmer the curry beef for 45-50 minutes, or until the beef is tender and the sauce has thickened.
