Bahamian Coconut Curry Beef

Ingredients
- 1 1/2 lbs beef, cut into cubes
- 2 tbsp curry powder
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, sliced
- 1 cup coconut milk
- 2 tbsp soy sauce
- 1 tsp brown sugar
- 1 tsp ginger, grated
- 1 scotch bonnet pepper, chopped (optional for heat)
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a bowl, season the beef with curry powder, salt, and pepper. Let it marinate for 15 minutes.
- Heat vegetable oil in a large pot over medium heat. Add the marinated beef and cook until browned on all sides. Remove the beef from the pot and set aside.
- In the same pot, sauté the onion, garlic, and bell pepper until softened.
- Return the beef to the pot and add coconut milk, soy sauce, brown sugar, ginger, and scotch bonnet pepper (if using).
- Simmer the curry beef for 45-50 minutes, or until the beef is tender and the sauce has thickened.
