Ingredients
- 1 lb fresh conch, cleaned and diced
- 2 cups long-grain white rice
- 1 onion, finely chopped
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 2 tomatoes, chopped
- 2 cups chicken broth
- 1/4 cup chopped cilantro
- 1/4 cup chopped parsley
- 1 tsp thyme
- 1/2 tsp paprika
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- In a large pot, heat the vegetable oil over medium heat.
- Add the onion, bell pepper, and garlic. Sauté until the vegetables are softened.
- Add the diced conch to the pot and cook for 5 minutes.
- Stir in the rice, tomatoes, thyme, and paprika. Cook for 2 minutes, stirring constantly.
- Pour in the chicken broth and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Stir in the chopped cilantro and parsley. Season with salt and pepper to taste.
- Remove the pot from the heat and let it sit, covered, for 5 minutes before serving.
