Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 cups white rice
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 tomatoes, diced
  • 2 tbsp curry powder
  • 1 tsp thyme
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • 2 cups chicken broth
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the onion, garlic, and bell pepper. Sauté until the vegetables are softened.
  3. Stir in the curry powder, thyme, paprika, and cayenne pepper. Cook for 1-2 minutes until fragrant.
