Bahamian Style Curry Goat

Ingredients

  • 2 lbs goat meat, cut into chunks
  • 2 tbsp curry powder
  • 1 onion, chopped

  • 1 bell pepper, diced

  • 1 scotch bonnet pepper, chopped
  • 2 sprigs thyme
  • 2 cups coconut milk
  • 2 cups water

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add the curry powder and cook for 1-2 minutes until fragrant.
  3. Add the onion, garlic, bell pepper, tomatoes, scotch bonnet pepper, and thyme. Cook until the vegetables are softened.
  4. Add the goat meat and brown on all sides.
  5. Pour in the coconut milk and water. Season with salt and pepper.
  6. Bring to a boil, then reduce the heat and simmer for 1.5-2 hours until the goat meat is tender.
