Ingredients
- 2 lobster tails, meat removed and chopped
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 1/4 cup tomato paste
- 4 cups seafood stock
- 1 cup heavy cream (or coconut milk for dairy-free option)
- 2 tablespoons butter (or olive oil for dairy-free option)
- 1 teaspoon paprika

Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion, carrots, and celery. Cook until the vegetables are soft, about 5 minutes.
- Add the minced garlic and tomato paste, and cook for another 2 minutes.
- Pour in the seafood stock and bring the mixture to a simmer. Add the chopped lobster meat and paprika. Let it simmer for 20-25 minutes.
