Bahamian Style Stuffed Lobster

Ingredients

  • 4 fresh lobsters
  • 1 cup bread crumbs
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 tomato, chopped
  • 1/4 cup parsley, chopped
  • 1/4 cup butter, melted
  • 1/4 cup lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the lobsters in half lengthwise and remove the tomalley and roe.
  3. In a bowl, combine the bread crumbs, onion, garlic, bell pepper, tomato, parsley, butter, lemon juice, salt, and pepper.
  4. Stuff the lobster halves with the breadcrumb mixture.
