Bahamian Sweet And Sour Chicken
This Bahamian Sweet and Sour Chicken recipe combines the flavors of the Caribbean with Chinese cooking techniques to create a delicious and unique dish.
Ingredients
- 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
- 1/2 cup pineapple chunks
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 1/4 cup ketchup
- 1/4 cup brown sugar
- 1/4 cup white vinegar
- 2 tbsp soy sauce
- 1 tbsp cornstarch
- 1/4 cup water
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- In a small bowl, mix together the ketchup, brown sugar, white vinegar, soy sauce, cornstarch, and water to make the sweet and sour sauce. Set aside.
- Season the chicken pieces with salt and pepper.
- Heat the vegetable oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned on all sides, about 5 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the garlic, onion, and bell peppers. Cook until the vegetables are slightly softened, about 3 minutes.
- Return the chicken to the skillet and add the pineapple chunks.
- Pour the sweet and sour sauce over the chicken and vegetables. Stir to coat everything in the sauce.
- Simmer for 5-7 minutes, or until the chicken is cooked through and the sauce has thickened.
