Ingredients
- 4 fish fillets
- 1 cup pineapple chunks
- 1 red bell pepper, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1/4 cup ketchup
- 3 tablespoons soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon vinegar
- 1 tablespoon cornstarch
- Salt and pepper to taste
- Green onions for garnish
Instructions
- In a small bowl, mix together the ketchup, soy sauce, brown sugar, vinegar, and cornstarch to make the sweet and sour sauce. Set aside.
- Season the fish fillets with salt and pepper.
- Heat some oil in a pan over medium heat. Pan-fry the fish fillets until golden brown on both sides. Remove and set aside.
- In the same pan, sauté the garlic, onion, and red bell pepper until they start to soften.
- Add the pineapple chunks and the sweet and sour sauce to the pan. Stir and cook until the sauce thickens.
- Return the cooked fish fillets to the pan, coating them with the sweet and sour sauce.
- Garnish with sliced green onions and serve hot.
