Ingredients

  • 4 fish fillets
  • 1 cup pineapple chunks
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1/4 cup ketchup
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon vinegar
  • 1 tablespoon cornstarch
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. In a small bowl, mix together the ketchup, soy sauce, brown sugar, vinegar, and cornstarch to make the sweet and sour sauce. Set aside.
  2. Season the fish fillets with salt and pepper.
  3. Heat some oil in a pan over medium heat. Pan-fry the fish fillets until golden brown on both sides. Remove and set aside.
  4. In the same pan, sauté the garlic, onion, and red bell pepper until they start to soften.
  5. Add the pineapple chunks and the sweet and sour sauce to the pan. Stir and cook until the sauce thickens.
  6. Return the cooked fish fillets to the pan, coating them with the sweet and sour sauce.
  7. Garnish with sliced green onions and serve hot.
