Bahraini Chicken And Apricot Curry

Ingredients

  • 1.5 lbs (700g) chicken, cut into pieces
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/4 tsp cinnamon
  • 1/4 tsp cayenne pepper
  • 1 cup dried apricots
  • 2 cups chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened.
  2. Add the minced garlic and spices (cumin, coriander, turmeric, cinnamon, cayenne pepper) to the pot. Stir and cook for 1-2 minutes until fragrant.
  3. Add the chicken pieces to the pot and brown on all sides.
