Ingredients
- 1.5 lbs (700g) chicken, cut into pieces
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 1/4 tsp cinnamon
- 1/4 tsp cayenne pepper
- 1 cup dried apricots
- 2 cups chicken broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened.
- Add the minced garlic and spices (cumin, coriander, turmeric, cinnamon, cayenne pepper) to the pot. Stir and cook for 1-2 minutes until fragrant.
- Add the chicken pieces to the pot and brown on all sides.
- Pour in the chicken broth and add the dried apricots. Season with salt and pepper.
- Bring the curry to a simmer, then reduce the heat and let it cook for 30-35 minutes until the chicken is tender and the sauce has thickened.
