Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 8 oz mushrooms, sliced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. Heat the olive oil in a large casserole dish over medium heat.
  3. Add the chicken thighs, skin side down, and cook until golden brown, about 5 minutes per side. Remove the chicken from the casserole and set aside.
