Ingredients
- 4 bone-in, skin-on chicken thighs
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 8 oz mushrooms, sliced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 cup chicken broth
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season the chicken thighs with salt and pepper.
- Heat the olive oil in a large casserole dish over medium heat.
- Add the chicken thighs, skin side down, and cook until golden brown, about 5 minutes per side. Remove the chicken from the casserole and set aside.
- Add the chopped onion to the casserole and cook until softened, about 5 minutes.
