Bahraini Chicken And Spinach Stew

Ingredients

  • 1.5 lbs chicken thighs, bone-in and skin-on
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/4 tsp cayenne pepper
  • 4 cups fresh spinach leaves
  • 2 cups chicken broth
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs with salt and pepper.
  2. Heat a large pot over medium heat and brown the chicken on both sides. Remove and set aside.
  3. In the same pot, sauté the onion and garlic until softened.
  4. Add the ground cumin, coriander, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
  5. Return the chicken to the pot and add the chicken broth. Bring to a simmer, cover, and cook for 25 minutes.
  6. Add the spinach and cilantro to the pot, and cook for an additional 5 minutes until the spinach is wilted.
