Bahraini Chicken And Spinach Stew

Ingredients
- 1.5 lbs chicken thighs, bone-in and skin-on
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 1/4 tsp cayenne pepper
- 4 cups fresh spinach leaves
- 2 cups chicken broth
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions
- Season the chicken thighs with salt and pepper.
- Heat a large pot over medium heat and brown the chicken on both sides. Remove and set aside.
- In the same pot, sauté the onion and garlic until softened.
- Add the ground cumin, coriander, turmeric, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Return the chicken to the pot and add the chicken broth. Bring to a simmer, cover, and cook for 25 minutes.
- Add the spinach and cilantro to the pot, and cook for an additional 5 minutes until the spinach is wilted.
- Adjust the seasoning with salt and pepper, then serve the stew hot.
