Bahraini Date and Walnut Cake (Ma'amoul)

Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup pitted dates, chopped
  • 1/2 cup walnuts, chopped

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x9 inch baking pan.
  2. In a large bowl, cream together the butter and powdered sugar until light and fluffy.
  3. Stir in the vanilla extract.
  4. In a separate bowl, combine the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture, mixing until well combined.
  6. Spread half of the batter into the prepared baking pan.
  7. Sprinkle the chopped dates and walnuts over the batter.
  8. Spread the remaining batter over the date and walnut layer.
  9. Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the ma'amoul to cool in the pan before cutting into squares and serving.
