Ingredients
- 1 kg lamb, cut into chunks
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp cinnamon
- 1/2 tsp ground ginger
- 2 cups chicken or lamb broth
- 1 cup tomato puree
- 1/2 kg fresh okra, trimmed
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and cook until softened.
- Add the lamb chunks to the pot and brown on all sides.
- Stir in the ground turmeric, cumin, coriander, cinnamon, and ginger, and cook for 2 minutes to toast the spices.
- Pour in the chicken or lamb broth and tomato puree. Season with salt and pepper, then bring to a simmer.
- Cover the pot and let the stew simmer for 1.5 hours, or until the lamb is tender.
- Add the fresh okra to the stew and continue to simmer for an additional 15 minutes, or until the okra is cooked through.
