Bahraini Lamb Stew With Okra

Ingredients

  • 1 kg lamb, cut into chunks
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 2 cups chicken or lamb broth
  • 1 cup tomato puree
  • 1/2 kg fresh okra, trimmed
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, and cook until softened.
  2. Add the lamb chunks to the pot and brown on all sides.
  3. Stir in the ground turmeric, cumin, coriander, cinnamon, and ginger, and cook for 2 minutes to toast the spices.
  4. Pour in the chicken or lamb broth and tomato puree. Season with salt and pepper, then bring to a simmer.
  5. Cover the pot and let the stew simmer for 1.5 hours, or until the lamb is tender.
  6. Add the fresh okra to the stew and continue to simmer for an additional 15 minutes, or until the okra is cooked through.
