Bahraini Seafood Paella

Ingredients
- 1 lb mixed seafood (shrimp, mussels, squid)
- 2 cups basmati rice
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 tomato, diced
- 1 tsp turmeric
- 1 tsp paprika
- 1/2 tsp saffron threads
- 4 cups fish or seafood broth
- 1/4 cup chopped fresh parsley
- Lemon wedges for serving
Instructions
- In a large paella pan or skillet, heat some olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened.
- Add the sliced red bell pepper and diced tomato to the pan, and cook for a few minutes until the vegetables are tender.
- Stir in the turmeric, paprika, and saffron threads, and cook for another minute to release the flavors.
- Add the basmati rice to the pan and stir to coat it with the spices and vegetables.
- Pour in the fish or seafood broth and bring the mixture to a simmer. Cook for about 15-20 minutes, or until the rice is almost tender.
- Add the mixed seafood to the pan, and gently nestle it into the rice mixture. Cook for another 5-7 minutes, or until the seafood is cooked through.
- Sprinkle the chopped fresh parsley over the paella, and serve with lemon wedges on the side.
