- 1/4 cup golden raisins
- 1/4 cup olive oil

- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- Salt and pepper to taste
Instructions
- In a large bowl, combine the grated carrots, orange segments, cilantro, mint, pistachios, and raisins.
- In a small bowl, whisk together the olive oil, lemon juice, cumin, cinnamon, ginger, salt, and pepper.
- Pour the dressing over the carrot and orange mixture and toss to coat evenly.
