Ingredients

  • 4 large potatoes, cut into wedges
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1/2 cup mayonnaise
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • Salt to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the potato wedges with olive oil, cumin, coriander, turmeric, paprika, salt, and pepper until well coated.
  3. Spread the seasoned potato wedges in a single layer on a baking sheet and bake for 25 minutes, or until golden and crispy.
  4. While the potatoes are baking, prepare the garlic aioli by combining mayonnaise, minced garlic, lemon juice, and salt in a small bowl. Mix well and refrigerate until ready to serve.
