Bahraini Spiced Quinoa Salad With Roasted Vegetables

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 small eggplant, diced
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped walnuts
  • 1/4 cup crumbled feta cheese (optional)

Instructions

  1. In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the quinoa is cooked and the water is absorbed.
  2. Preheat the oven to 400°F (200°C).
  3. In a large bowl, toss the diced eggplant, sliced bell pepper, zucchini, and red onion with olive oil, cumin, coriander, cinnamon, cayenne pepper, salt, and pepper. Spread the vegetables in a single layer on a baking sheet and roast for 20-25 minutes until tender and slightly caramelized.
