Ingredients
- 1 cup quinoa, rinsed
- 2 cups water
- 1 small eggplant, diced
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup chopped walnuts
- 1/4 cup crumbled feta cheese (optional)
Instructions
- In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the quinoa is cooked and the water is absorbed.
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the diced eggplant, sliced bell pepper, zucchini, and red onion with olive oil, cumin, coriander, cinnamon, cayenne pepper, salt, and pepper. Spread the vegetables in a single layer on a baking sheet and roast for 20-25 minutes until tender and slightly caramelized.
- Once the quinoa and vegetables are cooked, let them cool slightly. In a large bowl, combine the quinoa, roasted vegetables, chopped parsley, chopped mint, and walnuts. Toss to combine.
- If using, sprinkle the crumbled feta cheese on top before serving.
