Ingredients
- 2 cups basmati rice
- 3 1/2 cups water
- 1/4 cup vegetable oil
- 1 onion, finely chopped
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 1/2 cup raisins
- 1/2 cup slivered almonds
- Salt to taste
Instructions
- Rinse the basmati rice under cold water until the water runs clear. Drain and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until golden brown.
- Add the turmeric, cumin, and cinnamon to the pot, and stir for 1 minute to release the flavors.
- Add the rinsed rice to the pot and stir to coat the grains with the spiced oil mixture.
- Pour in the water and add salt to taste. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the water is absorbed.
- While the rice is cooking, in a separate pan, toast the slivered almonds over medium heat until golden brown. Remove from the pan and set aside.
- In the same pan, add the raisins and cook for 1-2 minutes until they plump up.
- Once the rice is cooked, fluff it with a fork and gently fold in the toasted almonds and raisins.
- Transfer the spiced rice to a serving platter and garnish with additional almonds and raisins if desired.
