Ingredients

  • 4 large artichokes

  • 1/4 cup chopped mint
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon

  • Juice of 1 lemon
  • 4 cups chicken or vegetable broth

Instructions

  1. Prepare the artichokes by removing the tough outer leaves and trimming the tops. Scoop out the choke with a spoon, leaving the heart intact.
  2. In a large bowl, combine the rice, ground beef, onion, tomatoes, garlic, parsley, mint, cumin, cinnamon, salt, and pepper. Mix well to combine.
  3. Stuff the artichoke hearts with the rice and beef mixture, pressing the filling in firmly.
