Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice

  • 1 teaspoon ground coriander
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste

  • 1/4 cup pine nuts
  • 2 tablespoons olive oil
  • 1 1/2 cups tomato sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large bowl, mix together the cooked rice, ground beef, onion, garlic, cumin, coriander, cinnamon, salt, pepper, parsley, mint, and pine nuts.
  4. Stuff the bell peppers with the rice and beef mixture.
  5. Heat the olive oil in a large skillet over medium heat. Add the stuffed bell peppers and cook for 5 minutes, turning occasionally, until browned on all sides.
  6. Pour the tomato sauce over the stuffed bell peppers in the skillet.
  7. Cover the skillet and simmer for 30 minutes, or until the bell peppers are tender and the filling is cooked through.
