Ingredients
- 4 large bell peppers
- 1 cup cooked rice
- 1 lb ground beef
- 1 onion, finely chopped

- Salt and pepper to taste
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 1/4 cup pine nuts

- 1 1/2 cups tomato sauce
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large bowl, mix together the cooked rice, ground beef, onion, garlic, cumin, coriander, cinnamon, salt, pepper, parsley, mint, and pine nuts.
- Stuff the bell peppers with the rice and beef mixture.
- Heat the olive oil in a large skillet over medium heat. Add the stuffed bell peppers and cook for 5 minutes, turning occasionally, until browned on all sides.
- Pour the tomato sauce over the stuffed bell peppers in the skillet.
- Cover the skillet and simmer for 30 minutes, or until the bell peppers are tender and the filling is cooked through.
- Serve the stuffed bell peppers hot, with a side of rice or salad.
