Bahraini Stuffed Zucchini With Rice And Ground Beef

Ingredients

  • 4 large zucchinis
  • 1 cup of long-grain rice
  • 1 lb of ground beef
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of cumin
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • 2 cups of chicken or vegetable broth
  • 2 tablespoons of olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the zucchinis and scoop out the flesh to create a hollow cavity. Set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  4. Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.
