Ingredients
- 4 large zucchinis
- 1 cup of long-grain rice
- 1 lb of ground beef
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 cloves of garlic, minced
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- Salt and pepper to taste
- 2 cups of chicken or vegetable broth
- 2 tablespoons of olive oil
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the zucchinis and scoop out the flesh to create a hollow cavity. Set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.
- Stir in the diced tomatoes, cumin, paprika, salt, and pepper. Cook for a few minutes until the tomatoes soften.

- Fill the hollowed-out zucchinis with the rice and beef mixture, and place them in a baking dish.

- Cover the dish with foil and bake in the preheated oven for 30-35 minutes, or until the zucchinis are tender and the rice is cooked.
- Remove from the oven and garnish with fresh parsley before serving.
