Baikal Caviar Deviled Eggs

Ingredients

  • 6 large eggs
  • 2 tablespoons Baikal caviar
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Fresh chives for garnish

Instructions

  1. Place the eggs in a single layer in a saucepan and cover with water. Bring to a boil over medium heat. Once boiling, remove from heat, cover, and let sit for 12 minutes.
  2. Transfer the eggs to a bowl of ice water and let cool for 5 minutes.
  3. Peel the eggs and slice them in half lengthwise. Remove the yolks and place them in a separate bowl.
  4. Mash the egg yolks with a fork and stir in the mayonnaise, Dijon mustard, lemon juice, salt, and pepper. Mix until smooth.
  5. Spoon or pipe the yolk mixture back into the egg white halves. Top each deviled egg with a small dollop of Baikal caviar.
  6. Garnish with fresh chives and refrigerate until ready to serve.
