Baikal Caviar Deviled Eggs

Ingredients
- 6 large eggs
- 2 tablespoons Baikal caviar
- 2 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon lemon juice
- Salt and pepper to taste
- Fresh chives for garnish
Instructions
- Place the eggs in a single layer in a saucepan and cover with water. Bring to a boil over medium heat. Once boiling, remove from heat, cover, and let sit for 12 minutes.
- Transfer the eggs to a bowl of ice water and let cool for 5 minutes.
- Peel the eggs and slice them in half lengthwise. Remove the yolks and place them in a separate bowl.
- Mash the egg yolks with a fork and stir in the mayonnaise, Dijon mustard, lemon juice, salt, and pepper. Mix until smooth.
- Spoon or pipe the yolk mixture back into the egg white halves. Top each deviled egg with a small dollop of Baikal caviar.
- Garnish with fresh chives and refrigerate until ready to serve.
