Baikal Sturgeon Tartare

Ingredients
- 200g fresh sturgeon fillet, finely diced
- 1 shallot, finely chopped
- 2 tbsp fresh chives, chopped
- 2 tbsp fresh dill, chopped
- 1 tbsp capers, drained and chopped
- 1 tbsp Dijon mustard
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- In a mixing bowl, combine the diced sturgeon, shallot, chives, dill, and capers.
- In a small bowl, whisk together the Dijon mustard and olive oil. Pour over the sturgeon mixture.
- Gently toss the ingredients to combine. Season with salt and pepper to taste.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes before serving.
