Baingan Bharta Bliss
Baingan Bharta is a classic North Indian dish made with roasted eggplant, tomatoes, and spices. This smoky and flavorful dish is a popular vegetarian option that pairs well with naan or rice.
Ingredients
- 2 large eggplants
- 2 tomatoes, finely chopped
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1 teaspoon ginger, grated
- 1 teaspoon garlic, minced
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/4 cup cilantro, chopped
- Salt to taste
- 2 tablespoons oil
Instructions
- Preheat the oven to 400°F. Prick the eggplants with a fork and roast them for 30-40 minutes until the skin is charred and the flesh is soft. Let them cool, then peel off the skin and mash the flesh.
- Heat oil in a pan and add cumin seeds. Once they splutter, add onions, green chilies, ginger, and garlic. Sauté until the onions are golden brown.
- Add tomatoes, turmeric, coriander powder, red chili powder, and salt. Cook until the tomatoes are soft and the oil separates.
- Add the mashed eggplant and cook for 5-7 minutes, stirring occasionally.
- Garnish with cilantro and serve hot with naan or rice.
