Baingan Tamatar (eggplant And Tomato Curry)
Baingan Tamatar is a traditional Pashtun dish that features the delicious combination of eggplant and tomatoes in a flavorful curry. This vegetarian dish is easy to prepare and packed with aromatic spices, making it a perfect addition to any meal.
Ingredients
- 2 large eggplants, cubed
- 4 tomatoes, chopped
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 2 green chilies, sliced
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- Salt to taste
- 2 tbsp oil
- Fresh cilantro for garnish
Instructions
- Heat oil in a pan and add cumin seeds. Once they splutter, add onions and sauté until golden brown.
- Add garlic, ginger, and green chilies. Sauté for a minute.
- Add tomatoes, turmeric, coriander powder, red chili powder, and salt. Cook until the tomatoes are soft and oil separates.
- Add eggplant and mix well. Cover and cook on low heat until the eggplant is tender.
- Sprinkle garam masala and garnish with fresh cilantro before serving.
