Ingredients
- 2 lbs beef stew meat, cubed
- 2 tbsp Bajan seasoning
- 2 tbsp vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 cup beef broth
- 1 cup water
- 1 tbsp tomato paste
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Season the beef with Bajan seasoning.
- Heat the vegetable oil in a large pot over medium heat. Brown the beef in batches and set aside.
- Add the onion and garlic to the pot and sauté until softened.
- Return the beef to the pot and add the carrots, potatoes, beef broth, water, tomato paste, and bay leaf.
- Season with salt and pepper, then bring to a boil. Reduce heat, cover, and simmer for 1.5 to 2 hours, or until the beef is tender.
- Discard the bay leaf and adjust seasoning if needed. Serve the Bajan Beef Stew hot.
