Ingredients

  • 1 lb mixed dried fruit
  • 1 cup rum
  • 1 cup butter
  • 1 cup brown sugar
  • 4 eggs
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp mixed spice (cinnamon, nutmeg, allspice)
  • 1/2 cup breadcrumbs
  • 1/2 cup chopped almonds
  • 1/2 cup cherry brandy

Instructions

  1. Soak the mixed dried fruit in rum overnight.
  2. Cream the butter and sugar, then beat in the eggs.
  3. Sift the flour, baking powder, and mixed spice together, then fold into the creamed mixture.
  4. Add the soaked fruit, breadcrumbs, almonds, and cherry brandy to the batter and mix well.
  5. Pour the batter into a greased and lined cake tin and bake at 300°F for 2-3 hours.
  6. After baking, let the cake cool, then soak it with additional rum and brandy.
