Bajan Black Cake
Bajan Black Cake is a traditional Christmas dessert in Barbados, also known as rum cake or great cake. It is a rich, dark, and moist fruit cake that is soaked in rum and aged for several weeks to develop its flavors.
Ingredients
- 1 lb mixed dried fruit
- 1 cup rum
- 1 cup butter
- 1 cup brown sugar
- 4 eggs
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1 tsp mixed spice (cinnamon, nutmeg, allspice)
- 1/2 cup breadcrumbs
- 1/2 cup chopped almonds
- 1/2 cup cherry brandy
Instructions
- Soak the mixed dried fruit in rum overnight.
- Cream the butter and sugar, then beat in the eggs.
- Sift the flour, baking powder, and mixed spice together, then fold into the creamed mixture.
- Add the soaked fruit, breadcrumbs, almonds, and cherry brandy to the batter and mix well.
- Pour the batter into a greased and lined cake tin and bake at 300°F for 2-3 hours.
- After baking, let the cake cool, then soak it with additional rum and brandy.
