Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 1 cup long-grain white rice
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil
  • 2 green onions, chopped (for garnish)

Instructions

  1. Season the chicken thighs with salt, pepper, paprika, and thyme.
  2. Heat the vegetable oil in a large pot over medium-high heat. Brown the chicken thighs on both sides, then remove from the pot and set aside.
  3. In the same pot, sauté the onion, bell pepper, and garlic until softened.
  4. Add the rice to the pot and stir to coat with the vegetables and oil.
  5. Pour in the chicken broth and bring to a simmer.
  6. Place the browned chicken thighs on top of the rice, cover the pot, and reduce the heat to low. Cook for 25-30 minutes, or until the rice is tender and the chicken is cooked through.
  7. Sprinkle with chopped green onions before serving.
