Bajan Chicken And Rice

Ingredients
- 4 chicken thighs, bone-in and skin-on
- 1 cup long-grain white rice
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 2 tablespoons vegetable oil
- 2 green onions, chopped (for garnish)
Instructions
- Season the chicken thighs with salt, pepper, paprika, and thyme.
- Heat the vegetable oil in a large pot over medium-high heat. Brown the chicken thighs on both sides, then remove from the pot and set aside.
- In the same pot, sauté the onion, bell pepper, and garlic until softened.
- Add the rice to the pot and stir to coat with the vegetables and oil.
- Pour in the chicken broth and bring to a simmer.
- Place the browned chicken thighs on top of the rice, cover the pot, and reduce the heat to low. Cook for 25-30 minutes, or until the rice is tender and the chicken is cooked through.
- Sprinkle with chopped green onions before serving.
