Bajan Chicken Curry (coconut Curry Chicken)
Bajan Chicken Curry, also known as Coconut Curry Chicken, is a popular dish in Barbadian cuisine. This flavorful and aromatic curry is made with tender chicken pieces, potatoes, and a rich coconut milk sauce, infused with a blend of spices.
Ingredients
- 2 lbs chicken, cut into pieces
- 2 large potatoes, peeled and diced
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 1 can (14 oz) coconut milk
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp paprika
- 1 scotch bonnet pepper, seeded and minced
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, minced garlic, and grated ginger. Sauté until the onions are soft and translucent.
- Add the curry powder, turmeric, cumin, coriander, and paprika to the pot. Stir well to combine and cook for 1-2 minutes to toast the spices.
- Add the chicken pieces to the pot and cook until they are browned on all sides.
- Pour in the coconut milk and add the diced potatoes and minced scotch bonnet pepper. Season with salt and pepper.
- Bring the curry to a gentle simmer, cover the pot, and let it cook for 45-50 minutes, or until the chicken is tender and the potatoes are cooked through.
- Adjust the seasoning if needed and serve the Bajan Chicken Curry hot with steamed rice or roti.
