Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup ice water
  • 2 cups shredded coconut
  • 1 cup granulated sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the flour and cold cubed butter. Use a pastry cutter or fork to mix until the mixture resembles coarse crumbs.
  3. Gradually add the ice water and mix until the dough comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
  4. Roll out the dough on a floured surface and carefully transfer it to a 9-inch pie dish. Trim any excess dough hanging over the edges.
  5. In a separate bowl, mix together the shredded coconut, granulated sugar, eggs, vanilla extract, nutmeg, and salt.
