Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup ice water
- 2 cups shredded coconut
- 1 cup granulated sugar
- 4 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the flour and cold cubed butter. Use a pastry cutter or fork to mix until the mixture resembles coarse crumbs.
- Gradually add the ice water and mix until the dough comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
- Roll out the dough on a floured surface and carefully transfer it to a 9-inch pie dish. Trim any excess dough hanging over the edges.
- In a separate bowl, mix together the shredded coconut, granulated sugar, eggs, vanilla extract, nutmeg, and salt.
