Bajan Lamb Curry

Ingredients

  • 2 lbs boneless lamb, cut into cubes
  • 2 tbsp curry powder
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1 scotch bonnet pepper, seeded and minced
  • 2 tomatoes, chopped
  • 1 cup coconut milk
  • 2 cups chicken or vegetable broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  1. Season the lamb with salt, pepper, and 1 tablespoon of curry powder.
  2. Heat the vegetable oil in a large pot over medium heat. Add the seasoned lamb and brown on all sides. Remove the lamb from the pot and set aside.
  3. In the same pot, add the onion, garlic, ginger, and scotch bonnet pepper. Cook until the onions are soft and translucent.
  4. Stir in the remaining curry powder and cook for 1-2 minutes to toast the spices.
  5. Add the chopped tomatoes and cook until they start to break down.
  6. Return the browned lamb to the pot and pour in the coconut milk and broth. Bring to a simmer, then reduce the heat and let it gently simmer for 1 hour, or until the lamb is tender.
  7. Adjust the seasoning with salt and pepper, if needed. Serve the Bajan Lamb Curry hot with rice or roti.
