Bajan Lamb Curry
Bajan Lamb Curry is a flavorful and aromatic dish that is a staple in Barbadian cuisine. This hearty curry is made with tender lamb, aromatic spices, and a rich sauce, making it a comforting and satisfying meal.
Ingredients
- 2 lbs boneless lamb, cut into cubes
- 2 tbsp curry powder
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1-inch piece of ginger, grated
- 1 scotch bonnet pepper, seeded and minced
- 2 tomatoes, chopped
- 1 cup coconut milk
- 2 cups chicken or vegetable broth
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Season the lamb with salt, pepper, and 1 tablespoon of curry powder.
- Heat the vegetable oil in a large pot over medium heat. Add the seasoned lamb and brown on all sides. Remove the lamb from the pot and set aside.
- In the same pot, add the onion, garlic, ginger, and scotch bonnet pepper. Cook until the onions are soft and translucent.
- Stir in the remaining curry powder and cook for 1-2 minutes to toast the spices.
- Add the chopped tomatoes and cook until they start to break down.
- Return the browned lamb to the pot and pour in the coconut milk and broth. Bring to a simmer, then reduce the heat and let it gently simmer for 1 hour, or until the lamb is tender.
- Adjust the seasoning with salt and pepper, if needed. Serve the Bajan Lamb Curry hot with rice or roti.
