Ingredients

  • 1 lb salted cod, soaked and flaked
  • 1 cup all-purpose flour

  • 1/4 cup chopped scallions
  • 1/2 tsp baking powder
  • 1/2 tsp black pepper
  • 1/4 tsp hot pepper sauce
  • 1/2 cup water
  • Oil for frying

Instructions

  1. In a large bowl, combine the flaked salted cod, flour, onion, garlic, parsley, scallions, baking powder, black pepper, and hot pepper sauce.
  2. Add water gradually to form a thick batter.
  3. Heat oil in a skillet over medium heat.
  4. Spoon the batter into the hot oil, forming small cakes, and fry until golden brown on both sides.
  5. Remove the saltfish cakes from the oil and drain on paper towels.
