Bajan Sweet Potato Pudding

Ingredients

  • 4 cups grated sweet potato
  • 1 cup brown sugar
  • 1 cup coconut milk
  • 1/4 cup melted butter
  • 1/4 cup raisins
  • 1/4 cup shredded coconut
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the grated sweet potato, brown sugar, coconut milk, melted butter, raisins, shredded coconut, vanilla extract, cinnamon, nutmeg, and salt. Mix well.
  3. Pour the mixture into a greased baking dish and smooth the top with a spatula.
  4. Bake for 1 hour or until the pudding is set and the top is golden brown.
  5. Allow the pudding to cool for 10 minutes before serving.
