Ingredients
- 4 cups grated sweet potato
- 1 cup brown sugar
- 1 cup coconut milk
- 1/4 cup melted butter
- 1/4 cup raisins
- 1/4 cup shredded coconut
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the grated sweet potato, brown sugar, coconut milk, melted butter, raisins, shredded coconut, vanilla extract, cinnamon, nutmeg, and salt. Mix well.
- Pour the mixture into a greased baking dish and smooth the top with a spatula.
- Bake for 1 hour or until the pudding is set and the top is golden brown.
- Allow the pudding to cool for 10 minutes before serving.
