Baked Cassava Fries With Tamarind Dip
Baked Cassava Fries with Tamarind Dip is a popular snack in Sierra Leone, known for its crispy texture and tangy flavor. This recipe offers a healthier twist by baking the cassava fries instead of deep-frying them, and the tamarind dip adds a delightful sweet and sour kick.
Ingredients
- 2 large cassava roots, peeled and cut into fries
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cup tamarind paste
- 2 tablespoons honey
- 1/4 teaspoon cayenne pepper
- 1/4 cup water
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, toss the cassava fries with olive oil, paprika, garlic powder, salt, and pepper until well coated.
- Spread the seasoned cassava fries in a single layer on a baking sheet and bake for 20-25 minutes, flipping halfway through, until golden and crispy.
- While the fries are baking, make the tamarind dip by combining tamarind paste, honey, cayenne pepper, and water in a small saucepan. Simmer over low heat for 5-7 minutes, stirring occasionally, until the dip thickens slightly.
- Remove the fries from the oven and serve hot with the tamarind dip.
