Ingredients

  • 4 cups fresh or frozen corn kernels
  • 1 cup milk
  • 4 eggs
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese
  • 1/2 cup cornmeal
  • 1/4 cup butter, melted
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  2. In a blender, combine the corn kernels and milk. Blend until smooth.
  3. In a large bowl, beat the eggs and then add the blended corn mixture, mozzarella cheese, cheddar cheese, cornmeal, melted butter, salt, and black pepper. Mix until well combined.
