Ingredients
- 4 cups fresh or frozen corn kernels
- 1 cup milk
- 4 eggs
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 1/2 cup cornmeal
- 1/4 cup butter, melted
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish.
- In a blender, combine the corn kernels and milk. Blend until smooth.
- In a large bowl, beat the eggs and then add the blended corn mixture, mozzarella cheese, cheddar cheese, cornmeal, melted butter, salt, and black pepper. Mix until well combined.
- Pour the mixture into the prepared baking dish and smooth the top with a spatula.
